Barbara Foster, Executive Chef at the Sea to Sky Gondola in Squamish, shares her recipe for caramelized apple crepes.
Caramelized Apple Crepes
Crepe Batter (makes 15 crepes)
1.5 cups flour
1 tbsp sugar
Pinch Salt
4 eggs
1.5 cups milk
30 ml butter
Orange zest

-Combine flour sugar and salt
-Whisk together the eggs and milk
-Melt butter in pan
-Add liquid to the dry ingredients and mix
-Add melted butter and orange zest
-Pour batter thinly into the pan and flip once when lightly browned
Caramelized apples
2 apples: peeled, cored and sliced
15 ml butter
1 tsp sugar
Pinch cinnamon
Heat pan, melt the butter and add apple slices. Add sugar and cinnamon. Caramelize the apples slices (or flambe with some maple whiskey). Place in your crepe and wrap. Top with icing sugar, maple syrup or ice cream.
