Chef Eric Heck of WildTale Coastal Grill shares his recipe for honey mussels.
Ingredients:
-Honey Mussels 1 lb
-Olive Oil 1 oz
-Butter 2 oz/2oz to finish
-Shallots, minced 1 T
– Bacon, double smoked tiroler 3 T
-White Wine 4 oz
-Beer 4 oz
-Whip Cream 1 oz
-Chili Flakes 1 tsp
-Thyme pinch
-Salt, black pepper to taste
Procedure:
1. Heat large frying pan over medium high heat
2. Add oil, butter then add the shallots and cook for 1 minute
3. Add diced bacon and cook until shallots are translucent
4. Add the mussels, stir well then cover the fry pan and cook over medium hear for approximately 3 to 4 minutes until all mussels are opened and season to taste
5. Add the white wine, beer, chili flakes and bring to a simmer
6. Pour mussels into heated bowl and serve hot
