Tomatoes and whipped feta
- 1 fl oz extra-virgin olive oil
- 1/2 fl oz fresh minced garlic
- 1 lb tomato medley
- 1/2 tsp pinch salt and pepper
- 8 half pieces artisan sourdough
- Macedonian feta
- 6 fl oz sour cream to every 16 fl oz of feta
1. Add extra-virgin olive oil to a pan with garlic and sauté for 10 seconds

2. Add tomato medley, seasoning with salt and pepper to taste
3. Once tomatoes are blistered, remove from heat and allow to cool
4. Whip feta cheese vigorously in a bowl
5. Add a dollop of sour cream to whipped feta and stir into the mixture for even consistency and let sit
6. Toast your bread of choice (we recommend a seeded sourdough), drizzle with extra-virgin olive oil
7. Spoon your whipped feta (you can use Macedonian feta or regular feta) into the middle of your plate before drizzling with fresh herbs and extra-virgin olive oil
8. Place your roasted tomatoes around the whipped feta, shingling your toast slices around the tomatoes and feta
