Caren McSherry of Gourmet Warehouse offers some ideas for strawberry season.
Ingredients
2 cups B.C. strawberries, hulled and quartered
1 large ripe avocado, peeled and diced, try to make it the same dice as the berries
1/3 cup diced purple onion
1 tablespoon fresh lime juice, or more to taste
1 small garlic clove, minced
2 tablespoons jarred pickled jalapeño slices, chopped
1/2 cup cooked black beans, optional
1/2 cup each fresh basil and cilantro
2 tablespoons really good fruity olive oil
Sea salt to taste
Place all the ingredients in a medium bowl and toss to mix. Do not overmix as the fruit will crush. Season up with salt and more jalapeno as you like
