Crab and Feta Melt

Crab & Feta Melt


Ingredients:


1 Cup (225 g) Cooked Fresh Crab Meat, diced


¼ Cup Cooked Corn Kernels


4 Tbsp. Feta Cheese, crumbled


2 Tbsp. Mayonnaise


2 Tsp. Onions, diced


2 Tsp. Celery, diced


¼ Tsp. Dried Dill Weed


½ Tsp. Garlic Salt


¼ Tsp. Black Pepper


2 Tbsp. Butter, at room temperature


8 Slices Sourdough Bread


½ Cup Cheddar Cheese, grated


In a bowl, stir together all ingredients except butter, bread, and Cheddar cheese, then set aside. Butter one side of four bread slices. In a frying pan on medium heat, place four slices buttered-side down. Spread crab mixture evenly over slices in frying pan then, add a layer of Cheddar cheese. Place remaining 4 bread slices on top of mixture, then butter them. Cover pan with lid and grill sandwiches 2 minutes on each side. Serves four.
