1 lb ground beef
1 lb ground pork
1 teaspoon kosher salt
2 cloves garlic, minced
1 shallot, minced
1 pepper, seeded and finely chopped
1 lime, juiced
3 Tablespoons fish sauce*
3 Tablespoons sweet chilli sauce*
1 Tablespoon canola oil
1/4 cup cilantro, chopped
1/4 cup fresh mint, chopped
1/4 cup fresh basil, chopped
1 cup salted peanuts, chopped
1 head butter lettuce,
washed and leaves separated
In a bowl, mix pork, beef, garlic, kosher salt, shallots and pepper. In a small bowl whisk together lime juice, fish sauce and sweet chilli sauce.
In a skillet, heat canola oil over medium/high heat. Add pork mixture and cook until no pink remains (about 8 minutes). Remove from heat and stir in lime juice mixture. Let stand for 5 minutes and stir in fresh herbs. Top with chopped peanuts and serve with butter lettuce leaves for wrapping.
