Leslie Horton’s Christmas cookie recipe

Leslie Horton: Bubby’s Birds Nest Cookies

  • 1 cup butter
  • ½ cup packed brown sugar
  • 2 egg yolks
  • 1 tsp vanilla
  • 2 cups flour
  • ½ tsp salt
  • 2 egg whites
  • 1 cup finely chopped walnuts or coconut

Mix together butter, brown sugar, egg yolks and vanilla.

Blend in flour, salt and mix together by hand.

Roll into 1 inch balls. Dip into egg white and roll in nuts or coconut.

Put your thumb print in the centre.

Bake at 350 degrees for 10-15 minutes until light brown, when cool, fill the thumbprint with your favorite jam or jelly.
