Amber Schinkel’s Christmas cookie recipe

CALGARY – Your stockings are hung by the chimney with care, but do you have some cookies to leave for Santa Claus?

Global News is helping you prepare for the holidays by sharing some special Christmas cookie recipes from our staff.

Scott Fee, Amber Schinkel, Jordan Witzel and Leslie Horton are revealing the recipes for their favourite holiday treats on the Morning News.

Amber Schinkel: Bite-sized cherry cheesecake

  • 2 – 8oz soft cream cheese
  • 3/4 cup sugar
  • 2 eggs
  • 1 tbsp lemon juice
  • 1 tsp vanilla
  • 24 vanilla wafers
  • 1 can cherry pie filling

Beat first five ingredients until no lumps remain.

Line small/medium sized muffin cups with vanilla wafers.

Fill cups 2/3 full of mixture.

Bake 15-20 minutes at 375 F.

Top with pie filling and chill.

Amber Schinkel: Nanaimo Bars

  • 1/2 cup butter
  • 1/4 cup sugar
  • 5 tbsp cocoa
  • 1 egg, beaten
  • 1 3/4 cups graham wafer crumbs
  • 1/2 cup finely chopped walnuts

Melt first three ingredients in heavy saucepan. Add egg and stir on low/medium heat to cook and thicken. Remove from heat. Add crumbs and nuts. Press firmly into parchment paper lined 9×9 pan.

  • 1/2 cup butter
  • 3 tbsp milk
  • 2 tbsp vanilla custard powder
  • 2 cups icing sugar

Cream butter, milk, custard powder, and icing sugar together well. Beat until light. Spread over bottom layer.

  • 4 squares semi-sweet chocolate squares & 1 square unsweetened chocolate (1 oz each)
  • 2 tbsp butter

Melt chocolate and butter over low heat. Cool. When cool but still runny spread over second layer. Chill.
