Noon News Hour recipe: The Killer “B”


1 oz Okanagan Spirits Aquavitus

1 oz Long Table Gin

0.5 oz Cocchi Amaro

1 oz B.C. Blueberry Juice (20 muddled B.C. Blueberries)

0.5 oz Honey Bee Centre Wild Flower Honey

0.5 oz Lemon Juice

3 dashes Bittered Sling, Great Bear Rainforest Extract

Shake all ingredients together with ice. Fine strain over crushed ice in a large glass. Optional: top with B.C. blueberry foam (recipe below).

B.C. Blueberry Foam

Combine the following ingredients in an ISI whipping canister using two no. 2 whipping chargers. For optimal foam, allow to rest in the refrigerator for 12 hours prior to use.

10 oz Egg Whites (from approx. 10 large eggs)

2 oz Lemon Juice

2 oz Honey

2 oz Blueberry Juice (40 muddled B.C. Blueberries)

Yields large batch enough for 40 cocktails. Foam can be refrigerated and used as a topping for desserts and other drinks.
