Halibut with Kale Cilantro Pesto and Warm Potato & Asparagus Salad

Halibut
Season with salt and pan sear with small amount of vegetable oil.
Potato salad
Steam 2 lbs of baby potatoes until fork tender
Steam 1 lb of fresh asparagus, cut into 2” sections, until fork tender. Submerge in ice water to chill. Drain & set aside.
1 small handful of chopped fresh cilantro
15 fresh mint leaves, chopped
Vinaigrette
¼ cup of your favorite olive oil
3 tablespoons white wine vinegar
1 clove of fresh garlic, minced
1 tablespoon Dijon mustard
Shake in a small jar with a lid to combine
Dress the warm potatoes and chilled asparagus with the vinaigrette. Season to taste with salt and pepper to taste. Add the fresh herbs & stir to combine.
Serve the salad warm with the freshly pan seared halibut
