Pita
Preheat oven to 425°.
Place a teaspoon of olive oil into a fry pan and heat. Add the onions and cook for 20-30 minutes or until golden.
Take a whole head of garlic and trim off the top then wrap in foil and place into a 425° oven for about 30 minutes – 1 hour; cool 10 minutes. Squeeze the garlic pulp out of the skins and discard skins.
Combine onion, garlic, 1/2 teaspoon salt, sour cream, cottage cheese, and remaining ingredients in a large bowl. Taste for seasoning then cover and chill 1 hour.
Take the pita bread and brush the whole top with olive oil and the sprinkle with salt, pepper and thyme. Cut into small wedges and place onto the baking sheet. Bake for about 10 minutes or until golden.
Serve the pita chips with dip!
