Mini Chocolate Pudding Cakes
Serves: 4
1 tsp. butter
5 oz bitter chocolate
½ tsp vanilla
1 Tb. brandy
7 Tb sugar
4 eggs, separates
1 Tb flour
Pre heat oven 375F
Butter 4 ramekins and place onto a baking sheet.
Melt the chocolate over a double boiler. Remove from heat and allow to cool.
In another bowl, beat the vanilla, brandy and sugar.
Add the egg yolks one by one and beat well.
Then mix in the flour.
Beat the egg whites until stiff peaks, then fold gently into the chocolate mixture.
Pour into the ramekins and bake for 10 – 12 minutes.
The pudding should be gooey inside.
