Caramel Pecan Mini Tartlets


30 mini tart shells


1 cup pecans


Caramel:


1 1/3 cup golden brown sugar


7 Tb butter


6 Tb light corn syrup


2 Tb water


½ tsp salt


6 Tb whipping cream


3 oz semi sweet chocolate


Combine the brown sugar, butter, corn syrup, 2 Tb water and salt in a pot. Stir over a medium heat until sugar is dissolved. Bring mixture to a boil and without stirring, cook for 2 minutes.


Remove from heat and add the cream. Stir in together. Pour the caramel into a container and cool for 10 minutes.


Place the pecans into the precooked tart shells and pour the caramel over the top of the nuts. Then set aside.


While that’s firming up, melt the chocolate over a double boiler. Once the chocolate is completely melted, drizzle it over top of the tartlets.


Allow to cool, then serve!
