Ingredients
16 oz Mixed Greens
4 oz Coleslaw Mix (Green Cabbage & Carrots), thinly sliced
10 ea Grape Tomatoes (cut in half)
2 oz Edamame Beans
2 oz Dates (thinly sliced)
2 oz Corn Niblets (roasted)
2 oz Walnuts (candied)
2 oz Feta Cheese (finely grated)
4 oz Miso Dressing (measure 4 oz from Miso Dressing Recipe below)
Pinch Parsley (finely chopped)
8 ea Pickled Ginger (sliced)
16 oz Chicken Breast (4 oz portions)
Pinch Kosher Salt
Pinch Black Pepper (ground)
Preparation
1. Add Mixed Greens, Coleslaw Mix, Edamame Beans, Dates, Corn, Walnuts, and Miso Dressing to large mixing bowl.
2. Mix thoroughly and plate into individual serving bowls.
3. Garnish with Pickled Ginger, Feta Cheese, and Chopped Parsley.
4. You can add protein like Grilled or Blackened Cajun Chicken, Sautéed Shrimp or Tofu to make the salad more like a meal. Place on top of Salad Mix and garnishes.
Miso Dressing
Serves 6-8*
Ingredients
2 Tbsp Red Wine Vinegar
2 Tbsp Apple Cider Vinegar
1 tsp Miso Paste
3 tsp Thai Sweet Chili Sauce
1 tsp White Sugar
1 Tbsp Brown Sugar
1 Tbsp Dijon Mustard
1 Pinch Fine Grind Pepper
1 cup Vegetable Oil
1/2 cup Olive Oil
Preparation
1. Wisk all ingredients except Vegetable and Olive Oil in bowl.
2. Wisk in both Oils very slowly, until dressing thickens.
* makes more dressing than Cowgirl Recipe requires, cut in half for smaller serving or use again for another salad.
