3 Tb olive oil
½ cup onions, chopped
2 cups mushrooms, sliced
¾ lb chicken breast, sliced
1 tsp garlic
½ cup white wine
¼ tsp salt & pepper – of each
2 cups cooked rice
1 cup chicken stock
½ cup cream
½ cup Parmesan cheese, grated
¼ cup parsley, chopped
Pre heat oven 375.
Heat a pan and add the oil. Add the onions and cook until lightly golden. Add the mushrooms and brown. Then remove that from the pan and brown the chicken. Add the mushroom mixture back to the pan and add the garlic and wine. Bring to a boil and reduce the wine volume by half. Add the rice, stock, cream, parsley and half the cheese. Stir it all together then place it in a casserole.
Sprinkle the top with the remaining parmesan and bake for about 10 – 15 minutes, until the flavours are blended together.
Remove from the oven and serve.
