Enjoy this receipe from Kristin Donovan, Executive Chef, Dish Cooking Studio.
Ingredients:
4 litres of water
1 cup sea salt
1 cup sugar
aromatics for flavour
(i.e. garlic, thyme, sage, onion, bay leaves, oranges, cloves, etc…)
Instructions:
1. Boil until salt and sugar have dissolved (3-5 mins)
2. Chill
3. Pour into pot or brining bag, immersing the turkey
4. Refrigerate for up to 24 hours
5. Throw out brine
6. Pat dry
7. Cook turkey
