It’s guacamole day! Guacamole is easy to make, great for every occasion and can be versatile to suit every palate. Best of all, avocados from Mexico are always in season, so you can make guacamole all year round.
Guacamole Recipe by Chef Darren Clay, Pacific Institute of Culinary Arts
Ingredients:
80 g Tomatoes (small dice)
30 g Jalapenos (minced)
15 ml Lime juice (fresh)
1 clove Garlic (minced)
1 tsp Cumin
1 tsp Salt
200 g Avocados from Mexico
Method:
Mix all ingredients except tomatoes in a bowl.
Add freshly peeled avocados from Mexico. Mix and break up with your hands so you have a chunky guacamole. Adjust seasoning with more lime juice and salt.
Use immediately or place avocado
