It’s always wise to keep canned seafood products on hand in the pantry for when unexpected guests arrive. For such an occasion, try these garlic toasts topped with smoked mussels.
Mussels Bruschetta
2 plum tomatoes, diced
30 ml (2 tbsp) finely chopped chives

30 ml (2 tbsp) olive oil
5 ml (1 tsp) salt
2 ml (1/2 tsp) sugar
2 cans (each 85 g) smoked mussels
Garlic toasts
In a small bowl, mix tomatoes, chives, olive oil, salt and sugar. Divide mixture equally among appropriate number of toasts: top each with 2 smoked mussels.
Makes 16 servings.
Top: Instead of arranging prepared bruschetta on a plate, let your guests serve themselves. It helps to maintain the crispness of the toasts.
