Treat guests to a simple-to-make rainbow trout and vegetable bake

With only five ingredients, this entree for fall entertaining could never be easier.

Cooking rainbow trout in a foil package is a simple way to prepare the ever-popular fish. A spoonful of Dijon mustard will add a new twist to this main-course dish, which is paired with a tasty vegetable medley.

4 rainbow trout fillets

60 ml (4 tbsp) olive oil

60 ml (4 tbsp) Dijon mustard

4 small carrots, thinly sliced

1 leek, thinly sliced

Salt and pepper, to taste

Lay out a sheet of aluminum foil large enough to encase fillets on a work surface. Place olive oil in middle and top with trout.

Spread Dijon mustard on top of trout. Place vegetables on and around fish. Season with salt and pepper.

Fold foil over fish and vegetables, folding in ends and crimping edges to seal pouch. Place pouch on a baking sheet and bake in a 245 C (475 F) oven for 30 minutes.

Makes 4 servings.
