Fresh mango salsa and grilled shrimp skewers dress up spaghetti for summer

This summery pasta dish infused with Latin American flavours is a delightful option to serve and it is easy on the budget. This recipe is also packed with healthy antioxidant and nutrient-rich ingredients such as mango and red pepper.

Removing the seeds from the jalapeno peppers takes away much of the heat. You can adjust the amount of jalapeno used to your taste. When working with jalapenos, be careful to wash hands before touching eyes as the oils from the peppers can burn.

Shrimp Pasta

If desired, replace shrimp with grilled skewers of boneless, skinless chicken breast.

1 box (375 g) whole-grain spaghetti

50 ml (1/4 cup) lime juice

45 ml (3 tbsp) canola oil

3 cloves garlic, minced

500 g (1 lb) peeled, uncooked large shrimp (21/30 count)

2 very ripe mangoes, peeled, chopped and divided

2 red peppers, chopped

175 ml (3/4 cup) chopped red onion

2 jalapeno peppers, seeded and chopped

2 ml (1/2 tsp) each salt and pepper

250 ml (1 cup) coarsely chopped fresh coriander leaves

Preheat grill to medium-high heat.

In a small bowl, whisk lime juice with oil, lime zest, honey and garlic. In a separate bowl, toss shrimp with 30 ml (2 tbsp) of the dressing. Let stand for 10 minutes. Thread shrimp onto 6 large wooden skewers that have been soaked in water to minimize flareups.

Meanwhile, place remaining dressing mixture and one mango in the bowl of a food processor fitted with a metal blade. Pulse until finely chopped. Add remaining mango, red peppers, onion, jalapenos, salt and pepper; pulse until coarsely chopped.

Prepare spaghetti according to package directions; drain well. Meanwhile, grill shrimp skewers for 2 to 3 minutes per side or until shrimp are pink all over. Toss hot spaghetti with mango salsa mixture and coriander. Garnish each portion with a shrimp skewer.
