This spring, Wildebeest underscores its philosophy of working closely with local farms, foragers and providers by offering a spring ‘Field and Forest’ Menu available June 3 to 17. The menu features such dishes as Foxglove Farm asparagus, smoked Yarrow Meadows duck, Peace Country lamb shank, rabbit rigatoni and a ‘Grand Fir’ dessert comprising malted custard, grand fir ice cream and cannoli pastry. As part of the feature, bar manager Alex Black will also shake up a ‘How to Dougie’ cocktail mingling Douglas fir-infused Resurrection Spirits White Rye, Dry Vermouth, foraged Flowering Currant Cordial, Maraschino Liqueur and Herbal Bitters. Wildebeest’s Field and Forest Menu dishes are available in limited quantities and served on a first-come, first-served basis. Reservations are recommended and can be made via Open Table or by calling Wildebeest at 604-687-6880.
