Reuben sandwich, tuna tostadas among dishes served at Edmonton food festival

EDMONTON — The Rocky Mountain Wine & Food Festival returns to Edmonton next weekend.

Now in its 13th year, the festival will run Oct. 24 and 25 at the Shaw Conference Centre.

From premium wines, spirits and beer, to cuisine from an assortment of Edmonton’s top restaurants and hotels, there’s a little something to satisfy every appetite.

One of the restaurants featured at the festival is Earls. The head chef of Earls Tin Palace, Rui Carvalho, stopped by the Weekend Morning News Sunday to prepare a few of the featured dishes.

Ingredients:

  • 4 oz sliced smoked brisket
  • 1 oz sauerkraut (squeezed to a 50 per cent yield)
  • 2 pieces sourdough bread (5/8″ sliced, buttered on one side)
  • 1 fl oz Thousand Island dressing
  • 1.5 oz swiss cheese (grated)
  • 1 dill pickle spear

Ingredients:

  • 3 friend 3″ corn tortillas (seasoned with nacho chip seasoning mix)
  • 1T cilantro aioli
  • 3 slices avocado (1/4″)
  • 3 pieces (15 oz) chili rubbed tuna (1/4″ sliced)
  • lightly salted
  • 0.75 oz jicama (1/16″ x 3″ julienne)
  • 1 1/2t lime marinade
  • 3 pieces radish (1/16″ coins x no larger than 1″ diameter)
  • 9 pieces micro cilantro
  • 3 pieces pickled fresno chilies
  • 1/16″ lime wedge
