Cheddar your Wagons
Ingredients:
Preparation & Cooking
1. In a small bowl, mix garlic, parsley and butter together.
2. Butter outside of Kaiser rolls (tops and bottoms).
3. Spread 1 tsp (5 mL) barbecue sauce on inside of each bun half.
4. Place 2 bottoms butter-side down in skillet (or 4 if using large griddle).
5. Add 2 oz (55 g) of sliced Cheddar and 2 oz (55 g) of sliced roast beef on each bun.
6. Complete sandwiches by placing Kaiser tops on, butter-side up.
7. Place skillet on stovetop and cook over medium-low heat for approximately 7-10 minutes or until golden brown.
8. Carefully turn sandwiches with spatula and continue cooking for 5-7 minutes or until golden brown and cheese has melted.
9. Carefully remove from pan and serve immediately.
Preparation time: 20 minutes
Cooking time: 12-17 minutes
Yield: 4 servings
Suggestions & tips: I like serving this dish with vinaigrette based coleslaw or tossed green salad and sometimes baked beans to complete the Western theme. If you like a bit of extra-spice, try sprinkling your favorite steak spice over the sandwiches when serving.
Add some sautéed onions to make this one a showstopper.
Sautéed Onions Ingredients:
1 large onion, thinly sliced
1tbsp canola oil
Salt and pepper – to taste
Before assembling sandwiches sauté onions in a med-high skillet until golden brown, (10-15 minutes) season with salt and pepper and reserve for future use.

Curry me Brie
Ingredients:
Preparation & Cooking
1. In a small bowl mix butter and curry powder together.
2. Spread ½ of the butter on one side of two slices of the naan bread.
3. Place one naan butter side down in a large non-stick skillet or panini press.
4. Spread 2 tbsp (30 mL) mango chutney and place ½ sliced Brie, then ½ sliced pear on naan.
5. Cover with the second naan, butter side up. Cook first side over medium heat for approximately 5 minutes or until golden brown.
6. Using a spatula, flip carefully. Continue cooking on the second side for another 5 minutes or until golden brown and the cheese has melted.
7. Remove from heat and set aside for 2 minutes to cool slightly.
8. Wipe skillet with a paper towel and repeat instructions for the second sandwich.
9. Cut each sandwich in half and serve. Half a sandwich = 1 portion

Cook time: 10-12 minutes
Yield: Serves 4
Suggestions & tips: Cut sandwiches into smaller pieces once they have cooled a little and pass them as a hors d’oeuvres.
