Recipe
1 Cup ripe mashed bananas (about 2 large)
1 1/2 cups flour
2/3 cup sugar
3/4 cup regular oats
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 cup vegetable oil
1 tsp vanilla extract
1/3 cup low fat buttermilk
2 large eggs
Bake at 350 F for 55 minutes
Method
Preheat oven to 350 F.
Lightly spoon flour into dry measuring cups; level with a knife.
Combine flour and next 4 ingredients in a large bowl, stirring well with a whisk.
Stir in oats.
Combine banana, buttermilk, oil, vanilla and eggs in a separate bowl.
Then add flour mixture and stir just until moist.
Spoon batter into muffin tins coated with cooking spray or lined.
Bake at 350 F for about 55 minutes or until a wooden pick inserted in centre comes out clean.
Cool 15 minutes before removing to cool on wire rack.
