Paska Recipe (Ukrainian Easter Bread)

Makes: 5 loaves at 1.5 lb.

Use a cylindrical pan or bowl.

Step one:

2 level tbs. yeast

1 tbsp. sugar

2/3 cup water

Mix the sugar in the luke warm water well before adding the yeast. Let rise.

Step two:

4 eggs

½ cup sugar

-Beat until foamy

½ cup oil

1 tbsp. salt

-Add to the well beaten eggs

4 cups warm water

12 cups flour (or more if needed)

-Add to mixture.

Step three:

Add yeast mixture to flour mixture.

Mix or knead the dough about 10 minutes. Place in a well greased bowl and let rise for about 45 minutes or until it is double in size. Scale the base and let rest a bit to rise before you place the base in pans. Let rise in the pans until the dough has risen to about ¾ of the pan. Decorate and let the paska continue to rise until the dough reaches the top of the pan. Wash with an egg mixture (1 egg, 2tbsp. water, pinch of sugar.

Bake at 350 for about 40-45 minutes.

How to decorate (see picture): Brush some water on the surface so the dough sticks to the dough. Roll three dough pieces into long ropes and braid them. Place the braid along the circumfrence of the dough. Every paska needs a cross. Roll out 6 more dough ropes. Drape them individually  over the surface, crossing at the centre then weaving each rope under the previous one (basket weave). Curl the loose ends up, and stick them to the surface. Make dough leafs and stick them in the extra spaces.
