The worst thing about hosting an Easter dinner can also be the leftovers.

Oh sure, for the first day its fun, but then by Day 3 when the pickings are getting pretty slim you gotta move on — or do you?

Here are some great ideas from the Food Network Canada on what to do with extras after a big turkey feast.

How about to start, a nice cobb salad with blue cheese dressing made up of those extra deviled eggs? Also good for sandwiches?

Or maybe pasta, pesto and peas, made up of all those green peas that went untouched? (No wonder.)

Or family favourite turkey a-la-king, with peas in a pasty white sauce.

Then there’s the Easter dinner casserole, which is everything you can bake into a pie crust.

Too many leftover dinner rolls? Slice them up for a bread pudding dessert.
