Ingredients
2 tbs unsalted butter
500g frozen or fresh cranberries (or any other berry of your choice)
125g granulated sugar
4 eggs
Pinch of salt
grated zest of 1 orange

60g or 1/2 cup all purpose flour
250ml whole milk
60ml Grand Marnier or other liqueur (optional)
2 tbsp of icing sugar plus more for dusting
Method
Preheat oven to 400 degrees F
Grease a shallow 25cm porcelain or earthenware dish with 1tbs of butter.
Spread the berries in a tight layer in the bottom of the dish. In a mixing bowl, whisk together the sugar, eggs and salt until well blended. Directly sift in the flour into the egg mixture and whisk. Whisk in milk and liqueur (if using). Pour mix over berries. Cut the remaining tablespoon of butter into small pieces and dot the surface. Dust with 2 tablespoons of icing sugar.
Place in oven and bake until the surface is golden brown, about 25 minutes. Remove from oven and immediately dust with additional icing sugar. Serve lukewarm in wedges. Enjoy!
* Note: You can also use stone fruits in summer like plums and peaches. If you’d like to dress it up further with something rich, you can serve with a little sweetened whipped cream (creme chantilly)
