The food stands at the Queen City Exhibition are full of familiar favourites like mini-doughnuts and cotton candy. However, the standard fare isn’t enough for some vendors who were eager to show off more creative culinary creations.
“We cored out a pickle, put the hotdog in there and came up with the Big Pickle Dog, and everyone seems to love it,” Saltspring Concessions owner Scott Dennis said.
The Big Pickle Dog isn’t the only mash-up on the midway. A macaroni and cheese stuffed burger, deep fried Philly cheesesteak, and tequila infused funnel cake were just a few marquee items.
Dennis said that the winter is when people on the carnival circuit work on coming up with their new ideas.
However, not just anything makes it on the menu. Dennis has people back home eager to be test subjects in his kitchen experiments.

“We try it out with our friends, family and workers of ours as well. So once it gets past that stage we try it out, and hopefully it does well,” he explained.
New things are always being put into deep fryers, and for fair goers it’s all part of the fun.
“People are just looking for a new experience. You can get your basic hotdogs, pizza, and that kind of thing, but with fairs you come here for the festivities and to try new food,” fairgoer Maxwell Yang said.
Yang is a big fan of cheesecake, and tried the deep fried version for the first time on Thursday.
“I like it more than the original. Everything’s better deep fried, but they add a little cinnamon on top, and it really ties everything together,” he said.
