INGREDIENTS

• 3 tbsp. cooking oil
• 2 eggs, beaten
• 1 cup cooked (or roasted) turkey, ¼” diced
• 2 tbsp. corn kernels
• 2 tbsp. carrots, ¼” diced
• ½ cup of edamame beans, cooked and shelled
• 3 tsp. salt
• 2 tbsp. green onion, ¼” diced
• 4 cups of cooked jasmine rice
• 1 tsp. Teriyaki sauce
• ½ tsp. granulated sugar

DIRECTIONS

1. Heat 1tbsp oil in wok on high heat.
2. Add egg and scramble. Sprinkle ¼ tsp. salt and mix well. Transfer the scrambled egg into a bowl and set aside.
3. Heat wok on high heat and add oil.
4. Add corn, edamame beans and carrots.
5. Season with 1 tsp. salt and stir and cook for 1 minute.
6. Add cooked rice, remaining salt and cook for another 2 minutes. Loosen the rice with a spatula, if needed.
7. Add turkey, green onion, teriyaki sauce and sugar. Mix well.
8. Add scrambled egg, stir and cook for another minute.
9. Transfer the finished fried rice into a deep dish.
