WINNIPEG — Winnipeg food writer Shel Zolkewich visited Global Winnipeg’s Morning News Monday and made a tasty banana bread using Xyla, a sugar substitute made from natural sources with fewer calories and carbohydrates.

If you want to try your hand at making it at home, here’s her recipe for Christine’s Banana Bread:

  • 2 cups flour
  • 1 cup Xyla
  • 2 eggs
  • 1/2 cup canola oil
  • 3 mashed bananas
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/2 cup cold coffee
  • 1 cup pecans (optional) or 1/2 cup walnuts and 1/2 white chocolate chips

Mix all ingredients together until just blended. Spoon into greased loaf pan. Bake at 350F for one hour.
