Baby Bok Choy with Enoki Mushrooms

Ingredients:
1 lb baby bok choy or regular bok choy
2 packs enoki mushrooms
1 tbsp minced ginger
1 tbsp minced garlic
1 tbsp minced shallot
2 tbsp soy sauce
2 tbsp sweet soy sauce ( called kecap manis)

2 tbsp cilantro cut into ribbons
50ml cooking wine
20 ml canola oil
Salt and pepper to taste
Method:
1. Clean and rinse bok choy and reserve
2. Open enoki mushrooms and cut off bottom stems ( cut about 1 inch from bottom)
3. Heat large skillet to medium heat
4. Add oil
5. Add ginger, garlic, and shallot and soften ( about 2 mins)
6. Add enoki mushrooms to pan and continue to cook for 1 min
7. Add bok choy and turn heat up slightly
8. Toss all ingredients together in pan then add cooking wine, soy sauce and kecap manis
9. Continue to cook for another 1-2 minutes
10. Adjust seasoning at with salt and pepper to personal taste
11. Serve and enjoy!
