INGREDIENTS:
Diced chicken white and dark meat (50/50) meat… 1 lb
Diced shrimp… ¾ lb
Diced mushroom…1 ¼ cup
Salt… 1.5 teaspoons
Sugar… 4 teaspoons
Potato starch…3 teaspoons
White pepper…1 teaspoon

Sesame oil…1 tablespoon
Dried orange skin…1 teaspoon
Makes roughly 24 dumplings
METHOD:
Mix chicken meat with salt, potato starch until combined
Add shrimp and mix
Then add mushrooms and mix
Add sugar, white pepper, sesame oil and dried orange skin
Mix again
Place a spoonful of the mixture onto a wonton wrapper, and close the sides, leaving the top open
Place three to four dumplings into a bamboo steamer lined with parchment paper
Steam over medium high heat for 8 minutes
Remove and garnish with green onion or cilantro
Serve and enjoy
