It is an intense competition that pits some of the best chefs in Canada against one another.
The 77th Annual Gold Medal Plates Championship is underway in Kelowna this weekend.
Part of the contest includes a black box competition where the chefs are presented with secret ingredients and have under an hour to create two dishes using what they are given.
The ingredients in the black box included live crabs and licorice root.
Duncan Ly, a competitor from Calgary, says the hour-long competition was a big adrenaline rush but he was relieved to be done.
This is the first time the championship is being held in the Okanagan.
The culinary competition will crown one of eight competitors the best chef in the country on Saturday night.
