Whether baked, sliced, juiced or added to a soup, beets are a nutrient-dense vegetable with versatility. You can even add beets to your favourite cake recipe for a surprisingly delicious sweet treat.

If you have a flare for the dramatic, adding beets to an otherwise mundane meal adds not only nutritional value, but a shock of pink colour.

Beets pack a good helping of folacin, as well as Vitamin C and potassium, but come in at only 50 calories per cup (of cooked, diced beets).

Look for beets around three inches in diameter. Buy them when the outside is firm and keep them in the fridge (or cold cellar) up to one week.
