Sushi is about as British Columbian now as coffee and craft beer. And sushi aficionados have Vancouver-based chef Hidekazu Tojo to thank. He helped usher in the sushi craze that started in the 1980s by inventing the California roll. For more than 50 years, he has been introducing customers to creative Japanese cuisine, and as Jay Durant reports in This Is BC, he isn’t finished yet.
