Chili Cook Off: Yak Black Bean Chili Recipe

As the seasons change and the weather gets cooler many of us are pulling out our hearty chili recipes. Nearly every chef has their own tried and true recipe. Here at Global, we’ve been searching for the perfect chili recipe to submit for the Chili Cook Off Media Competition this Friday and came across this recipe from one of our Assignment Editors, Kory Siegers.

Yak Black Bean Chili

1 lb ground yak (or sirloin if you can’t get the yak)
1 onion
6 garlic cloves
4 jalapenos
Sauté above

Add
1 red pepper diced
3 ribs celery
1 cup corn
1 cup mushrooms
1 large can tomatoes
1/2 cup brown sugar
1 tbs better than beef boullion
1 large can black beans (rinsed)
3 tbs chili powder
1 tbs oregano
1 tbs black pepper

Cheddar and sour cream for serving

While this recipe contains many of the usual suspects – onions, tomatoes, beans. I was intrigued by the choice of meat protein: yak!

In thinking about my mother’s chili and my grandmother’s chili, they always contained beef. It never occurred to me to use something different. After a search of other chili recipes, I see that this is a growing trend – pork and turkey are making their way into many popular chili recipes.

What do you prefer? Some enjoy an old favourite, while others like to mix it up!
