Daksha’s Gourmet Spices’ Aloo Gobi

Aloo Gobi (Peas, Potato Cauliflower Curry)

Directions:

Makes 6 servings – Medium           

1.   Sauté 1½ chopped onions in 3 tablespoons of oil in a pan on medium heat

2.    Add 2 cups chopped cauliflower*, 2 diced potatoes, contents of aloo gobi curry mix and 1¼   teaspoons of salt

Stir.  Cook for 10 to 15 minutes

3.   Add 1 cup frozen peas, 2 chopped tomatoes  and ½ cup water.  Cook for 10 to 15 minutes stirring occasionally or till vegetables are cooked

*Substitute cauliflower with green beans or eggplant

Garnish with chopped cilantro.  Serve over a bed of basmati rice.
