Tomato, Feta & Couscous Salad

1 cup water

1 cup uncooked couscous

1/8 tsp salt

½ red pepper – chopped

½ yellow pepper – chopped

½ red onion – diced

½ long English cucumber – chopped

3 roma tomatoes – chopped

1 large bunch parsley – chopped

1 large bunch basil – chopped

3 green onions – chopped

4 oz. goat cheese – feta

½ container mixed beans (sprouts, lentils, )

Vinaigrette:

1 Tbsp seeded mustard

¼ cup balsamic vinegar

1/3 cup olive oil

salt and pepper to taste

Bring water to a boil in a small sauce pan. Stir in couscous and salt. Remove from heat, cover and let stand for 5 minutes.

Place the couscous in a large bowl. Add the remaining ingredients.

Place the seeded mustard and balsamic vinegar in a bowl and whisk in the olive oil. Season with salt and pepper. Add the vinaigrette to the couscous.

Stir well, serve and enjoy!
