Ingredients: 2 ½ Tbsp unsalted butter 1/2 cup icing sugar 2 egg whites 1/2 cup all purpose flour 2 Tbsp semi-sweet chocolate, finely chopped 1/4 tsp vanilla extract small pinch of salt
Directions: 1. Prepare fortunes on strips of paper. 2. Preheat oven to 350°F. 3. Cream butter and icing sugar. 4. In a separate bowl, whisk egg whites until slightly frothy. 5. Whisk egg whites into the butter mixture. 6. Stir in flour until combined and batter is smooth. 7. Stir in chocolate, vanilla, and salt. 8. Scoop 1 tablespoon of batter onto a baking tray lined with parchment paper or a silicone baking mat and then spread the batter to create a thin 4 inch diameter circle. 9. Bake until edges are golden brown. Approximately 10 minutes. 10. Remove from oven and quickly place fortune in the centre of the cookie. Fold the cookie in half like a taco with the fortune inside, then place the cookie on the rim of a drinking glass and pull the ends down on either side of the glass. 11. Place cookie in a muffin tin to hold its shape while it cools.
Makes 12 cookies
Note: As you become faster at the folding process, you can start baking two or more cookies at a time. |
