Not all green smoothies are created equal! Most are made with tons of fruit and just a token fistful of spinach to turn it greenish.
This version contains no fruit, although I occasionally add ½ cup of frozen blueberries, raspberries, or strawberries. A ratio of 4:1 alkaline-forming ingredients to fruit will maintain a fine balance.
Look for a fresh young coconut in the market from which to extract the juice and the meat. Otherwise, buy bottled unsweetened, unflavoured coconut water, or you might get lucky and find fresh frozen, unpasteurized coconut water. This is my go-to smoothie!
Ingredients
3 medium leaves kale, torn
1⁄3 cup thick coconut milk or meat of ½ young coconut
juice of 1 lime
6-inch piece English cucumber, scrubbed
5 sprigs mint
3 sprigs parsley
1-inch piece ginger, scrubbed
1 avocado
1 cup coconut water, or more as needed
2–3 drops liquid stevia
1–2 tbsp hemp hearts
1–2 tsp Udo’s 3-6-9 omega oil
Method
Blend the kale with the coconut water and lime juice until smooth. Add the cucumber, herbs, ginger, avocado, coconut milk (or coconut meat), stevia, and hemp hearts and blend again. Stir in the Udo’s 3-6-9 oil and pulse lightly to combine. Pour into a glass, pretty it up with a sprig of mint or a wedge of lime, and drink your greens.
