Recipe: Hunters Landing Paella

Hunters Landing Paella.

Arroz Mixto (Hunters Landing “Paella”)

Servings: 2

Ingredients:

Olive oil

¼ Spanish onion

2 garlic cloves

¼ yellow pepper

20 grams fresh garbanzo

100 ml crushed tomatoes

15 ml white wine

200 ml seafood stock

1 teaspoon aji amarillo puree

1 pinch of saffron

1 teaspoon smoked paprika

200 grams short grain rice

2 smoked chicken thighs

50 grams sausage

100 grams chicharron

2 prawns

2 lobster tail

100 grams fresh fish

200 grams mussels

50 grams squid

 

Method:

Heat olive oil in a paella pan and sauté chorizo, onions, garlic and yellow peppers for about 2 minutes.

Add crushed tomatoes, aji amarillo paste, and smoked paprika; allow simmering.

Mix in rice and deglaze with white wine.

Add saffron and about a quarter of the seafood stock. Allow rice to absorb all the liquid.

Cook seafood in the rice following this order: squid, lobster tail, prawns, and mussels.

Add fresh garbanzo.

Continue to add stock until rice is tender.

Finally, add smoked chicken thighs and chicharron.

Garnish with living sprouts and serve immediately.
