Ingredients:
114 g smoked ham fat
500 mL strong coffee
30 mL beef reduction
20 g salted butter
black pepper
Directions:
Fry the ham fat in a sauté pan until slightly crisp and it gains a little colour.
Pour the coffee over the ham fat and reduce the liquid by a ¼ of its original volume.
Stir in the beef reduction and the butter, bring it back to a rolling simmer, and check seasoning.
Finish with fresh ground pepper (if required), then strain and serve over fried slabs of ham.
N.B.: The traditional side dish for the ham is grits.
Grits are similar to other thick maize-based porridges from around the world, such as polenta. “Instant grits” have been processed to speed cooking.
The word “grits” derives from the Old English word “grytt,” meaning coarse meal.
