Ingredients:
510 g all-purpose flour
115 g cornmeal
200 g red onion (finely diced)
100 g corn kernels
16 g baking powder
30 g salt
20 g sugar
20 g onion powder
2 eggs
500 mL Mill Street Organic Lager
200 g diced Monterey Jack cheese
20 g minced cilantro
4 g ground cayenne pepper
Directions:
In a bowl, mix the finely diced red onion, flour, cornmeal, corn kernels, baking powder, salt, sugar, diced Monterey Jack cheese, ground cayenne, minced cilantro and onion powder.
In a separate bowl, whisk together the egg and the beer.
Make a well in the centre of the dry ingredients, and pour in your egg and beer mixture.
Stir all ingredients until soft dough forms.
Portion, using a purple-handled scoop, and fry in hot oil for exactly four minutes.
