Cooking Segment: Head chef and co-owner of Café Amore Bistro, Nick Crudo, whips up a delicious prawn pasta recipe.

Ingredients:

  • Prawns
  • Cream sauce
  • Tomato sauce
  • Butter
  • Garlic
  • Green onion
  • Parsley
  • Black pepper
  • Sambucca
  • Salt
  • Chilli paste with fish broth house made
  • Home made fresh pasta

Method:

  1. Prepare prawns by removing veins.
  2. Heat up frying pan and add spoonful of butter. Add chili paste and 1 or two cloves of garlic.
  3. Add prawns, green onion and pepper to taste.
  4. Add Sambucca and flame it
  5. Add tomato and cream sauce and heat for a few minutes to combine.
  6. Bring salted water to a boil
  7. Cook home made pasta
  8. Add pasta to pan and toss with your prawn and sauce mixture.
  9. Add parsley to garnish.
