It won’t be long now. David Jensen, who was out checking his fields of Taber corn today, said his roadside corn stands will open soon.
“The crop is coming along very nicely,” he said. “We expect to start harvesting the first week in August and our goal is to be selling by the long weekend. Hopefully we’ll have corn on the streets before the long weekend in August.”
While that might seem early, it’s not. It’s just earlier than recent years when bad weather pushed the crop back. “The past couple of years we’ve had not that great of crops and obviously later, but this year has been a more normal year for us.”

Jensen ships corn as far north as Fort McMurray, as far south as California and east into Saskatchewan. He says the big attraction is, “The taste. And it’s really the weather that we have, the irrigation and soil type that makes a great tasting corn.”
Great enough that there are copy cats. He says that with only three authentic Taber Corn growers some people sell corn that isn’t from Taber under the Taber name.
“That’s always a challenge.” said Jensen, “And it’s pretty hard to police so what we’ve done is made certificates that people can ask for. With who the grower is and his phone number on it.” He says people can ask to see the certificate when they’re at Taber Corn Stands and phone if they have any questions.
Taste, freshness and eating Taber Corn soon after it’s harvested are keys to its success.
“It’s going to be high quality this year so enjoy it.” Jensen said, “Six weeks is all the time we have fresh Taber corn on the market.”
