Jillian, founder of The Métis Bannock Queen, grew up in Fort McMurray, Treaty 8, a First Nation territory in northwestern Canada. Till today, she reminisces about eating her grandfather’s bannock straight out of the oven, covered with jam, butter and honey. When Jillian first moved to Vancouver eighteen years ago, her mother gave her a recipe book. Inside it were notes and recipes handwritten by her grandfather. Amongst the pages was his personal recipe for bannock. While her grandfather passed away in 2019, Jillian still uses his recipes to carry on that legacy. Today, she experiments with a variety of flavour combinations, with many seasonal options such as fresh berries in the summer and cinnamon and apples in the fall. Jillian initially started making bannocks during the pandemic as a way of fundraising for the not-for-profits in the lower mainland. It was her way of giving back to the community and sharing a piece of her Métis culture through her grandfather’s legacy. This was the inception of The Métis Bannock Queen.
