Ingredients:

1 lb. B.C. Long Line Ling Cod
12 oz. B.C. Fingerling Potatoes
8 Cipollini Onions
16 Cherry Tomatoes
1 lb. English Shelling Peas
1 bulb Garlic
Sea Salt
2 Granny Smith Apples
10 oz. Brown Sugar
8 oz. Roasted Almonds
Olive Oil
1 Cinnamon Stick
1 Orange
50 ml White Wine
50 ml White Wine Vinegar
1 White Onion
250 ml Whipping Cream
1 Lemon
1 oz Ginger

Method:

1) Make chutney, ginger cream and balsamic reduction as per recipe below.
2) Portion ling cod into 4 – 5 pieces.
3) Toss fingerling potatoes in olive oil and roast in 375 degree Fahrenheit oven.
4) Clean cipollini onions, and shell peas. Quarter cherry tomatoes
5) With 3 T of olive oil, saut onion and garlic. When nicely roasted, add tomatoes and peas. Let cool slightly.
6) Toss onion mixture with fingerling potatoes and place on plate.
7) Drizzle ginger cream around potatoes.
8) Sear and roast cod. Place on top of potatoes, spoon chutney on top and drizzle with balsamic reduction.
