Saskatchewan Waste Reduction Council wants you to eat garbage

It’s a simple concept many tend to forget: finding a use for every part of the food we harvest.

This is the thought behind Rubbish, a pop-up restaurant scheduled for later this month in Saskatoon. The idea came from The Saskatchewan Waste Reduction Council (SWRC), a non-profit group helping people in the province think twice about what they may otherwise discard.

“None of this (food) is actually garbage, we just treat it like it,” said Ashley Dopko, who works with the SWRC.

“A lot of times when people hear about an issue like this think ‘Well, I’m one person, what can I do?’ and with food waste, you can actually do a lot,” she said in an interview with Global News Morning.

Even with items like beet leaves and fruit pits, the menu for the Rubbish is meant to be creatively gourmet, and has local chefs looking for innovated ways to use items that would otherwise find their way into he landfill.

Rubbish hits Saskatoon Farmers’ Market Oct. 19, with three course meal prepared by The Hollows, and paired with a special “garbage” beer from Nine Mile Brewery.
