A Montreal chef has collaborated with other local experts to create what he calls the perfect vegan bagel. Traditional bagels fail the vegan plant-based test since they contain eggs and honey which is considered an animal product. When you can’t find what you want, why not make it yourself? The founder of Beagle Bagels decided to use apple-based honey as a substitute. His bagels are being served at Café Muscade until Sunday. If it’s a success, vegan bagels may soon be available on a wider scale.
