HALIFAX – Some of Canada’s best chefs sharpening their knives in Nova Scotia this week, as they get ready for some tough competition.

Culinary Team Canada is in Halifax, preparing for this year’s Le Salon Culinaire Mondial, which will take place in Basel, Switzerland in November.

“To me, it’s just having my second family, in a way, come over and hang out for a few days,” said Luis Clavel, who is both a team member and executive chef at Atlantica Hotel Halifax.

The team, which includes chefs from across the country, will serve a three-course meal at the hotel on Friday.

The event, called Going for Gold, is considered practice for the Switzerland competition because they will be preparing the exact same meal on the world stage.

The menu includes Quebec veal, Nova Scotia lobster and a chocolate lemon mousse cake — hand-crafted in the shape of a lemon.

“I have a lot of work ahead of me,” laughed Giulia Nardiello, a team member from Vancouver, as she began the task of creating 120 lemon moulds.

Ultimately, the team will compete at the IKA World Culinary Olympics, in Germany this November.

It will be chef Hamid Salimian’s third time at the elite culinary event. He says competing against such renowned international chefs is inspiring.

“Some of them have three-star, two-star restaurants. Some of them you’ve probably seen a lot in magazines and newspapers,” he said. “Just to stand beside them and be able to cook together and have a nice glass of wine after when it’s all done, it’s quite amazing.”
